Pretty sure I used this effect once to save texture memory by having the rgb values be in a smaller texture than the luminance.

Most (lossy) video codecs use the same trick. "Chroma subsampling" is the usual term.

Not just digital codecs, VHS for example had much lower chroma bandwidth than video bandwidth
