Because web developers with marginal training can make 80K+ in the USA because immigration walls are blocked.

Not true for other STEM fields that require fault tolerance and certifications by professionalization.

Take the abstraction a level further. Why would Lambda only be for STEM jobs?

I am, let’s walk through some job modalities though. I believe you’re able to build lambda school because the government locks out the foreign stem gladiators and it’s a solid business.
