Hmmm. Jason and the Argonauts, because it introduced me to stop motion and Ray Harryhausen when I was a kid. But a more recent choice would be Kubo and the Two Strings. Because it is a masterpiece of a movie

Nightmare Before Christmas Great story and great music. Although considered a "classically animated" stop motion film it was the "ah Ha!" moment where the World saw the potential of Stop Motion Animation. The pebble in the pond had been dropped.
