I heard it both ways until about 20 years ago when the hard "g" and elongated "e" came in, which deviates from the root "veg". I think people prefer that way because "vee-gans" sound like a race of aliens on Star Trek.

Pronouncing it "vay-gun" as if vegans were from Alpha Lyrae. Pronouncing "sophomoric" as su-FAW-muric (and still do because it's better my way).
