You can't use deadly force because someone is stealing from your shop. There was no threat, real or implied. There are alternatives like pepper spray, Tazers, brandishing a baseball bat, a dog, an alarm.

Here’s the problem, there is fear in the chess analogy. Like he jumped over the counter to the staff area escalating it, so staff could figure if he is going to tackle him there will be a risk to his life, so he tackled with a knife. I little too much granted.
