I feel like I get extraordinary service a remarkable number of times. And when I don't, I get normal service and that's obviously fine. And when I don't get normal service, it's obvious enough someone's having a bad day, there's a machine down or people out, etc.

I've cooked in ten+ kitchens over 15 years and the only thing I've seen cooks do is accidently drop a rag on the floor and use it again without washing. Saw servers/foh pick their nose, chew gum, mix drinks etc. Nobody in boh is spitting on the line.

Also it... Literally doesn't matter It's a little different in the age of covid, but you probably get more germs touching the handle on the door than you would from someone spitting into your hot food It's a gesture that makes them feel better that doesn't harm you, it's fine
