Some cultures have multiple souls. One type of soul could correspond to the personality, so each head could have its own personality-soul which has its own fate upon death. But there's also "body souls" (a sort of etheric body double). All 8 heads might have the same body soul.
Chaos magick of Peter J Carroll variety basically says souls are like water and have no firm point of demarcation, can be allocated however.

I'm just going by what i've read and heard of other cultures. Like in Daoism there's the hun and the po. In Norse mythology there's the mind, the shape, the fylgja, and others.
