I get why they do it, very strange that it's tolerated however, if I were a shop owner I'd be getting out my guns because you know what? I had nothing to do with why they're rioting and I've got a livelihood to protect - but you know how *that* would be the bad optics

Yes. Though I think counting "having insurance" is probably a better and more ethical protection strategy than using guns in this case. I don't oppose the use of force to protect property though except on the basis of moral alternatives.
