As milk ages there's a war going on between different types of bacteria and fungi. If the winner is something like streptococcus, then you'll likely get sick. If a harmless microbe wins, then it's pointless to drink it since any nutrients or protein has already been devoured.

AFAIK most milk is pasteurized so it's usually safe as long as it's been refrigerated properly. There is a difference between sour milk and spoiled milk.
