100% theft. Sex took place whilst she consented. Can't change consent after sex because of non payment, she still consented.

would you feel the same regarding other forms of trickery? Such as not wearing a condom, or blindfolds + wrong person, or STI status?

If "sex for pay" was what was consented to, then "sex without pay" is rape. Can't separate out issue of payment. It's integral.

Rape. If consent was given, say, on condition of condoms worn, but it’s removed during sex it’s assault. /1
