It depends on the "strong incentive". Money, as in your example, I wouldn't think it would negate the consent, but threats of harm would.

As long as force is not used, it's fine. Off shore oil rig workers have a 10% Annual fatality/horrific injury rate but start pay at .25Mil$

Money doesn't, but depending on what the dangerous thing is? You can't legally consent to actual bodily harm in Australia or Britain for eg.
