If our epoch system is supposed to start from Jesus's birth, why doesn't the year begin Dec. 25th?

It doesn't even start in the right year. Historians think if the was a historical Jesus he was born as early as 6BC.

I'm just going to throw this out there, but maybe because not all Christian traditions celebrate Christmas on the 25th...

And.. perhaps most importantly: do we know for sure Jesus was actually born on that particular day?

No one knows Jesus's birthday. They celebrated it on the 25th to convert pagans who were celebrating Yule.

It's closer than it was. New year's used to be April 1st. 'Course, Christ's birth wasn't Christmas any more than it was Year 1.
