I think such a rule isn't discretely enforceable, and therefore we shouldn't have it.

As bad as it might be, I could only believe that a woman should only be required to service customers whom they’re attracted to despite the various immutable characteristics their potential clients might have

That's a spicy one but the sex worker's right to deny any client should always be upheld.

Its a business so no, but at the same time, do we remove their ability to refuse on other ground too? Weight, size, smell, etc? I say blanket allow them to refuse for any reason, then they can use it as they want.

Would be interested in the response if it's framed differently e.g. "should sex workers be required to have sex with people they don't want to"

I'd say that the prostitute can discriminate based on whatever they want to, but that also allows anyone to discriminate against the prostitute if they feel the prostitutes reason is unjust.
