I'm afraid of starting a substack because then I'll feel pressured to write and maybe it'll suck out all the joy

Are you answering your previously posted question of "What are some of the ‘best’ criticisms against sex work"?

write a bunch without publishing them, then start a substack and go through your backlog at a set rate. if you find yourself writing less once you start the substack, turn it off when you run out.

I think you’re probably right.
I like the Patreon model, where you can charge people per piece of writing you actually ship, rather than getting people expecting constant value for money.

Make your mind up about: «is This a hobby or is it work?»
If you’ve categorized it then joy will either be the driver or less important in the decision-making process.

just spend a year or two writing long form stuff for fun and then create a substack if you feel like it after you've built up a good backlog

I started one a year ago and I had a similar fear but it’s been great. I usually post once a week, but sometimes it’s only 1-2 times a month. A couple of times I took 4-5 weeks off. People still paid and stayed subscribed. I didn’t lose the joy. I just write when I feel like it.
