My guess is that wealthier ppl tend to have access to the nice nature trails, and when working class ppl do they don't call it hiking, they use nature to go hunting or do farming or something more 'work' oriented; hiking is more pure recreation?

as in; I've heard a *ton* of my college-educated programmer friends talk about hiking, but when I visit Idaho I don't really hear anybody talking about hiking, tho they talk a lot about other outdoorsy stuff

I think you nailed it. Lots of working class people are outside often if not all day. They do lots of other activities that are in nature by virtue. I.e. If I'm gonna be hiking, it's because I'm on the way to a great lake to fish at.
