Why should someone on minimum wage be able to afford a medium-quality 2-bedroom rental? Do we have no room in our society for people who don't need much more than a low-quality one bedroom? or even roommates? I've lived with roommates for years and it's great.

Why shouldn't they? Housing should get cheaper and more accessible with technological improvements in building over time, just like almost every other product and service. The only reason it hasn't is because our states restrict new supply of it.

I've heard some arguments that total compensation, after adjusting for benefits, insurance, taxes, purchasing power, etc. - has remained pretty similar, and that the gap in housing affordability is almost nonexistent if you also adjust for home size

On housing affordability you may be referring to US nationwide figures - which mask substantial regional variation in housing affordability changes (largely dependent on housing supply, unsurprisingly). Some places have got substantially worse over time.
