In this scenario, I’m assuming, no one is being forced into sex work. You can chose a different line of work. Discrimination based on race is illegal. If one could not be not racist they should not be doing this work. Has nothing to do with rape

I asked the question after reading sex workers on a sex worker forum asking what to do after they experienced physical assault almost entirely from one particular race in one city, if it would be ok if they stopped seeing that race

It’s a fair sentiment to have and I don’t object to the practice, on a moral level. However, legally it’s well, illegal. Sexual assault should not be tolerated at any level however it would the same as a store clerk who gets robbed by only one racial group.
