"vegetable" is a huge category--what vegetables? What preparation?

I mean, I don't understand anyone liking eggplant. And zucchini consumption seems to just be about disposal, as it's the one vegetable that seems to grow like weed.

Really need to know what kind of vegetable to know what’s going wrong here... some vegetables are just wildly unpopular. I’d suggest looking at other preparation methods, though, for the ones you find you’re passing over.

No accounting for taste. I love vegetables and eat a ton. But they can be a bit bland and if cooked badly they can be truly terrible. Also as fresh, seasonal veggies are much better, I get mine almost exclusively from the farmer's market or from a CSA.
