She said "apparent birth gender" - as in, if you had to guess what gender they were assigned at birth. Your guess may not be right, but a perfectly androgynous person is very rare. Most people present more traits of one gender than the other, due to either biology or preference.

“Most people present more traits of one gender than the other”, yes, but not necessarily more of their birth gender. Apparent gender is basically clothes, hairstyle and facial hair. Shaven, most people could pass for any gender if they wished.

I... don't think this is true? I think likely I could guess what genitals someone has with like 95% accuracy regardless of their hair or clothing (maybe less so with makeup)

(I forgot about bosom; let's assume it's flat.) You are certainly right. But the remaining 5% are probably mostly made of the people who identify as non-binary.

I... don't know about that? I am extremely confident about the assigned-at-birth gender of nearly every nonbinary person I've met. Like it just seems extremely obvious to me.

I have this experience as well. I'm happy to treat people as they wish. But many gendered features like bone structure, height, facial features, breasts, hip:waist ratio are very difficult to alter or hide, even with surgery. This all hints at the person's birth gender.
