i can't for the life of me find the panel for export settings like file format or location

gotcha - just look on the right sidepanel for the "output properties" tab, usually 4th one down and looks like a little printer. in there you'll find filetype, format, etc.
then if you press fn+F12 (or Render > Render Image), it will do its thing in popup window & you can save
