Absolutely this. I didn't quite understand the power of putting the person you're talking to into an authoritative character until people started doing it to me in the last few years and it was extremely startling and humbling.

As in, I'm typically an extremely 'nice' person, probably moreso than the average. But sometimes I get these fan emails that are super prostratey and I feel myself turn into some sadistic fuck who wants to hit them with my power and it's like oh god I didn't know that was in me

Well, yes. They're assuming a character and the "way to engage" with that character is to become its foil, or something. It's just, I didn't know the ability to become a character so 'mean' was inside me; if you'd asked me before I would have sworn it'd never happen to me
