Would you support a change that required you to pay your taxes in labor instead? For example, you pay no tax, but some months out of the year you have to work at a government facility or publicly institution for no pay.

Money is much more fungible than labor. This would lead to a significant loss is national income.

I'm happy to pay my taxes in exchange for the freedom to use my non work hours how I want to. When I volunteer my time, it's for organizations I choose to support.

I would be willing/interested to do this for me (would be happy to teach classes a few months every year), but I worry that for people lower on the income scale, they might not be able to manage no pay for a few months. It would at least need some fine-tuning as an idea.

That's called corvee labour. It was employed by the Sui Dynasty for major construction projects, including the Great Wall and the Grand Canal. If I recall correctly, the annual death rate was 1 in 3. Not very appealing. en.m.wikipedia.org/wiki/Corv%C3%A
