So are older gay people like, incredibly stoked that they got to witness a mass transformation in public attitudes towards gays in their lifetime? Like can you imagine a mass transformation in public attitude in regards to something you desperately want?

Yes, they are. You just have to look at the videos of older couples marrying.

Kind of makes you realize how much of public opinion is just a performance though

They don't even have to be old, I'm (just barely) in my 20s and I grew up with gay marriage being seen as some kind of crazy ultra-liberal pipe dream and casual homophobia was widespread when I was in secondary school. I later found by best friend at school was actually gay.

I've seen what seems like a disproportionate number hold a grudge and have an attitude that seems to reflect a belief that nothing has really changed. Can't blame them for being angry, but still seems a bit odd.

It’s not as extreme a thing, but I get it because I’ve also seen a mass transformation where being a D&D geek became cool finally.

Sky Gilbert has a lot to say on why he's not only not stoked, but feels like the gay rights movement he was part of was essentially co-opted, if not outright betrayed. It's just one perspective, but it sheds some light on why some older gays might not be all that excited.
