I've done a few types of sex work and it's kind of both? To do really well requires more skill and effort compared to most entry and mid-level jobs, but it's very easy if you don't mind making low (like minimum wage equivalent) wages.

To be competitive you have to have a lot of skills that aren't immediately apparent from the outside. I got really, really good at doing sales for example, and learned how to build websites, and track traffic flow, and how to run good click through rate ads, etc.

The industry adjusts to supply and demand like normal, but with some depression (cultural taboo/grey legality) on the supply side, so you mostly get typical entertainment entrepreneur market but with inflated pay.
