True. People have returned to religion for far less. Generally it is effective as a coping mechanism, which is why it is prevalent in most societies. It takes certain psychological attributes to be able to live without expectations or “hope” of a guiding master or an afterlife.

There must be a system of meaning, internally and externally, and to achieve any interpersonal goals there must be an agreed system of meaning, and religion is the most basic. Outside of maybe raw language.

We can also witness this happen to some as they experience a kind of personal apocalypse, and they see their bodies and health begin to fail with age. Many are at least claimed, often by others close to them, to have turned back to the faith with a deathbed conversion.

I have a hypothesis that the first to reappear would be ancestral worship, as pockets of experts in STEM fields live out their days attempting to rebuild or share knowledge. It depends on the nature of the disaster. The more the old civ is intact, the slower the memory fades.

I'd expect it to return too, but for a different reason: religion has historically been very good at promoting cooperation among small groups, and that would become very valuable in a world without law, contracts, and other modern, impartial ways of securing cooperation.
