Does that apply to believe/disbelieve in God?
I always find people who totally believe in God are similar to the people who totally disbelieve in God.

Totally wrong would be impressive. I'm not sure anyone is that perfect. :-)
But yeah, everything we believe is just a map, not the territory itself. This is why Buddhism says that the root of all suffering is attachment to our beliefs. Beliefs give us guidance, but aren't laws.
