Did italics originate when people just got so excited when writing that their words got all rushed?

Nah, Hippocrates invented it. that is why to this day you can not read doctor's handwriting.

I'm an obsessive italic user - but on MOST platforms I have to use capitals for lack of the font

I thought I was told it compressed the font, allowing more characters per line. Either that, or something about Italy.

Nope. It originated out of Italy as an early typeface to replicate handwriting. The emphasis came later, but in the 15th century literate people were taught to write everything in italic.
None of this is hard to research. No need for baseless conjecture
Nice imagination though
