My wife is starting an herb garden so I want an herb to contribute. Only problem: I'm not sure I've ever eaten an herb? I do plenty of cooking but, historically, I have liked my cooking bland. What's a good starter herb and what sorts of dishes would I use it in?

Sage or thyme, excellent with roast chicken. Rosemary, amazing on roast potatoes. Tarragon, great with lamb chops.
