There is a fourth loaf but in the hubbub of doing deliveries etc I forgot to take a pic haha. It’s in the freezer now. But the open crumb of these loaves is incredible. It’s not sourdough, but rather a long ferment poolish based bread with instant yeast from Ken Forkish.

A finicky recipe if you ask me, but the results are pretty superb. Wish I got this type of result from sourdough tbh.
