My sourdough starter grew a lot overnight so I had to find a use for the discard. I decided to try pancakes. I made a recipe since none of the ones I found looked that good to me.

Mix the sourdough starter and the milk together. Add flour, mix until shaggy. Add egg, mix. Add honey, oil, salt and mix. Add water and mix. Scoop 1/3 cup of batter into preheated frying pan with a bit of melted butter. Flip when it bubbles and is more solid along the edge.

The batter should be liquid but thick. I eyeballed a lot of this because I know what pancake batter should look like, but I think as long as it’s thick but liquid you should be okay. Liquid can be whatever you have also. I used some water because I didn’t have enough milk.

But all milk, buttermilk, etc would be okay too.

Also don’t burn your hand on the pan

My starter btw is part oat flour and part self rising flour. I need a bigger jar for it tbh, but I don’t have one and idk if I should use a plastic container.

That’s awesome! The only starter I’ve ever had was “Amish friendship bread” starter that lived in a gallon freezer bag on top of the fridge. It came with a recipe, long since lost, and we lived in terror of it even though it never busted the bag. I hope they were tasty!
