Well...shit. I can't eat raw fruits and vegetables (oral allergy syndrome, whee), are there particular things that retain more Vitamin C in cooking than others?

Does freezing them remove vitamin c? In my case freezing most types of fruit protects me from oral allergy syndrome. I don’t generally get it from vegetables though.

Haven't tried freezing, but dehydrating unfortunately does not work for me so I assume not

Just saw this: as someone with OAS, I haven’t gotten scurvy yet and I haven’t eaten raw fruits or veg for 3 years now. I roast most of my produce and drink pasteurized orange juice. Roasting keeps most of the vitamin c. Boiling leeches it.
