Please shut up about chinese diaspora dishes being "inauthentic". They're invented by Chinese people. They're no less Chinese than the Shanghai chef inventing xiaolongbao in 19thC. Or the southward migrating Hakka chefs who adapted dumplings into stuffed tofu because no wheat.
Same here. And when I got older, going for Chinese with my friends was always a great time when we got to see each other outside of school/university. I have a lot of attachment to the Chinese food where I’m from, I’m grateful.
