I will put a pinch of sugar into a homemade tomato sauce in order to balance the acidity from the tomatoes...but beyond that I couldn't say.
I have a question for you, twitter (and feel free to tell me to stay in my lane): sugar in spaghetti, am I right in saying this is a thing? I'm seeing a lot of people getting very upset at the notion of this.

Sugar in a sauce to balance acidity, e.g. from tomatoes... sure. In spaghetti water... eh? But i won’t knock it til I’ve tried it?

yeah again I add sugar to tomato sauce but that's not specifically what I'm asking about here

I've heard it in a tomato-based sauce used on/with spaghetti, as it cuts the acidity of the tomatoes, but I wouldn't put it just on the noodles!
