So about 25 years ago I had steak for the first and only time in my life, & came away thinking steak was an overhyped bag of crap, and I am now beginning to wonder if it just wasn't a very good steak.

Butter is the key to the steak experience. My mother recalls covering a platter with pats of butter when my grandfather was cooking steak on the grill, which he would then place on top of the butter pats. The butter plus meat juices make the best gravy.
