something like 90%+ of American Jews are Ashkenazi so it makes sense why their food dominates the "Jewish food" conceptual category in the US; Bukharian/Turkic Jewish food is amazing but I couldn't tell you how you meaningfully distinguish it from other cuisines of that region

I think that’s a very popular opinion, as any kiddush luncheon consisting mostly of hummus, falafel and dolmas can attest. A really unpopular Jewish food opinion is that Ashkenazi food can be excellent and has gotten a bad rap from the ready-mixes in the supermarket Kosher aisle
