I do understand where the concern stems from, but I think a better solution is to ensure that there is a variety of all meal types because there will always be meat eaters and vegetarians/vegans.

But this puts the cost and organisation time up. Everyone can eat vegan food. Its simple! No one needs to consume meet EVERY DAY, and most conferences do not last longer than 3-4 days.

Last event I've been to the lunch was baked potato with a choice of possible sides and toppings. But, whoever you were, if you wanted to eat: baked potato.

Also if you’ve prepared platters for someone with a specific dietary requirement ensure the food goes to that person. There have been too many times I went hungry because an academic in the lunch queue ahead of me fancied a change and took my (names/labelled) plate

This is why the catering staff in TIC at Strathclyde hide the good vegan scran under the table, so that other folk don't go "ooh, that looks nicer than what I've got, so I'll have that instead"

When the standard conference fare is sandwiches for lunch and cookies for breaks, coeliac disease is a nightmare to handle. I always let organisers know in advance, and 50% of the time no action is taken. Organisers *have* to cater for allergies, even if it’s only one person.

This! Fellow celiac. And being handed a vegetarian meal with “just don’t eat the cookie” as the solution does nothing for my blood sugar later in the day.
