From what I have read you can dump the autopilot and disable the system by two switches or CB's. There is a great NASA study on what pilots of certain nationalities behaviours when there is an emergency, apparently the Irish dump the AP and fly manually.

It may not be the best thing but in my career when it all goes wrong I tend to default to manually flight. I do wonder though about the new generation of pilots, I know many who do 200 hours on single and multi and then straight to large airliners where they rarely fly manually.

When I teach, if you are a good manually handling pilot I'll push you to use the AP, if you use the AP comfortably then I'll push you to fly manually. I've always done this to ensure you are well rounded and understand your aircraft and systems.

The media has done a good job covering the 2 recent Boeing 737 MAX 8 unfortunate crashes but should not rush to judgement. 100s of 1000s of hours have been flown without incident. Boeing has experience and expertise to fix the problem. May turn out to be minor software fix.
