Why? Why is he chasing the poor animal who was likely just going about his day looking for food or what not?

Because this was a show from the 50s called Zoo Quest in which the London Zoo had a specific list of animals for him to retrieve and he just convinced the BBC to give him a budget to film it; he probably wouldn’t agree with plucking non-endangered animals from the wild now

It’s a really fascinating series so long as you treat it as a product of its time, the historical footage is invaluable
