So going to buy some beer, I was overwhelmed by all the “craft IPAs” and by the fact that they advertised the hard cider as “gluten-free.” Who do I have to blame for these abominations? Is it hipsters? My money’s on hipsters.

Father, i've studied beer a little in university so I can try to explain. First, the brief story of the IPA. The british developed the IPA as a beer that would keep on the long boat trip to India prior to the opening of the Suez. (A journey of several months).

Regular beer would spoil, so brewers doubled the amount of yeast and the amount of hops (hops both impart flavour and act as antimicrobials). This style was brought to the colonies as a favourite.

The American IPA is a stronger iteration: even more yeast, and even more hops. It became a work of excess, a fratty attempt to see who can have the bitterest beer/spiciest wing/curry/what have you.

The craft scene has developed in the last twenty years and as upended the American tradition of beer, dominated by macrobrews making exactly the same drink in ten plants across the country, or homebrewers. With craft beer, homebrewers could go pro.

While this has been extremely good in some ways (reviving ancient/lost beverages, bringing in Belgian influences, etc) in others it has been rather deleterious (think "bacon sriracha chocolate quadruple IPA")
