When I was in college a girl told me "I love my apartment, it has wood floors and a gas stove!" and I didn't really understand the benefit of the gas stove. Still don't.

There's way more of it. You simply can't deliver the heat that e.g. a steak requires on an electric range.

I'm not a heathen. But you do need a transcomprehensible amount of heat, applied quickly, to get the desired gradient of doneness and not dry it out
