  1. @global_gourmet That's nice, but your link doesn't go to http://FOODSinseason.com - the way it should. It is "Foods", not "Food".
  2. @blaircairo Mangalitsa belly is incredible! You can order Mangalitsa produced by Wooly Pigs here: http://bit.ly/8lXrlk
  3. @blaircairo I use 2 plants. One skins and one scalds. Scalding seems best. The one that skins is optimal for one of my farms, so I use it.
  4. @blaircairo I don'thave a problem with Stan's pig being skin-off. He probably doesn't have a USDA-inspected plant near him that scalds pigs.
  5. @blaircairo That's neat. Too bad Stan's slagutherhouse skins the pigs.
  6. @blaircairo Interesting. I thought Stan's pigs were all pre-sold to the Scheerins, Poli, Virant, Sears - from this: http://bit.ly/2TMYHX
  7. @blaircairo Who sold Mercat the pork?
  8. @SCDSqueez I'm happy you like our Mangalitsa!
  9. @lesliedines Yes. Also, Foods In Season will ship you Wooly Pigs brand products: http://www.foodsinseason.com/
  10. @bonnevivante I did think it would be shelf stable. I hope to have it that way some day. I think it will require canning.
  11. @BonneVivante I'd keep it in the fridge or freezer, not on a shelf -- it has typical "safe handling" instructions on it.
  12. Mangalitsa lard is perfect: http://bit.ly/4V1umf @foodsinseason ships you Mangalitsa lard by Wooly Pigs: http://www.foodsinseason.com/
  13. RT @foodista: Mangalitsa Belly Braised In Soy Sauce just about melts in your mouth http://foodista.com/YB8MRP73

  17. @bitterbiscuit Great! But there's no list in Manga-l-i-t-s-a. Manga-lit-sa rhymes with "pizza".
  18. @mshotel @bamiyahara @kavin_du Customers like you are amazing: http://bit.ly/5ArGWd
  19. @mshotel Just got it. Very impressive! You should meet @bamiyahara (sous vide) and @kavin_du - both M* jowl fans.
  20. Sold a bunch of Mangalitsa leaf lard today. I hear there's an article in the Seattle Times that mentions leaf lard.
