  12. If you are smoking ham AND turkey, place the ham on an upper shelf so the raw poultry juices don't contaminate the ham. side x side is fine.
  13. @pipeslangley it really depends on how much smoke flavor you like. It is more robust than others but I love it. I prefer mesquite or pecan.

  15. @ratebeer That is a myth.. smoke will continue to flavor the meat throughout. Test this by smoking 2 meats.. one 20 min and one 2 hours.
