  3. roasted broccoli: chop up 1 head broccoli, toss w 1T olive oil, salt and 1/2 onion chopped. cook@ 375 till browned and fork-tender

  16. brussels sprouts: blanch 1lb sprouts for 8min cut in half mix w 2T oil 2 minced garlic cloves salt cook@500 for 15 min/till brown and crispy

  18. added a few orange peelings and peppercorns to the brine this evening. a nice addition.
  19. pork brine-4 c lukewarm h2o handful sugar handful kosher salt star anise 1T vanilla soak pork tloin in mixture for 1h rinse cook as desired
