Belgian Mussels.Boil shallots, beer, garlic, thyme. Add mussels, cover steam 3 mins or until open. Remove mussels, boil liquid add butter.

perfect belgian fries w mussels. Peel potatoes square off ends, top & base. Cut in batons fry in oil 325 F 7 mins 2nd fry 375 to brown

@ the water will evaporate, it's just to help the caramel melt. try a single recipe 1st--candy making can be tricky. good luck!

@ for the caramel, don't stir while melting. once amber colour, remove from heat, add stuff and pour immediately on baking sheet.

Boil 1Cwhip. cream 1/4 C butter 1/2 C sugar. Simmer 3 mins. Add 1/4C lemon juice, 1 tsp gr lem rind. Pour in 4 ramekins, set in fridge.

Try latkes w other roots,celeriac,sweet potato,parsnip. Grate 2 C's add 3T flour, 1/2 C grated onion, 1 egg, S&P. Fry in lots oil 3 min/side
