  3. @AtYourPalate If I recall correctly, the broth makers just use chicken fat, not even meat.
  4. @PamReiss The boxes are certainly easier to use than cans, and they have a more sophisticated feel to them.
  5. @PamReiss Yes, tried at #kosherfest. Tastes like canned broth, and similarly lacks the gelatinous body you get from homemade stock.

  9. @elierosenfeld Yes, I added some fat. Burgers weren't dry- the meat just didn't bind together well. Maybe 2 grinds with fine plate next time
  10. Ground my own brisket for burgers last night. Good taste, still not getting consistency right-- too crumbly. Suggestions?

  12. @koshereye Lamb tagine was heavenly. I used my homemade chicken stock in place of water, which gave the sauce a delicious texture.
  13. @koshereye I also saw the TJs turkeys here, great marketing: kashering becomes "brined with sea salt!"
  14. Cafe Eilat serving sushi weekly: Wed, Thu, Motzei Shabbos, Sun. Been pleased with quality & presentation; rice could be seasoned a bit more.
  15. An intact bird for Thanksgiving is irrationally 20th-century. Cook breast and legs separately so each comes out perfect.
