@ Try Side Ribs, more fat equals more flavor. Go low and slow 220 degrees for about 4hrs (indirect heat). Enjoy!

@ Butter knife inserted under 2nd last rib on large end of rib, turn knife sideways to create pocket, stick finger in and pull.
