  10. ate at a 1 star michelin tonight. pretty awesome!!! whole lake char roasted in salt dough with cucumber and celery root. LUNGS in ragout!!
  11. day 1 at hangar 7.. 60% of prep done, only a few recipe issues.. but problems solved. More prep and a first service tomorrow night...
  12. day 1 at hangar.. training. can they produce our food?
  13. no sleep in 26 hours and going strong. 12 hours on a plane, 2 beer halls and goulache 2 ways w/dumplings and spetzel, all before dinner
  14. Off to Austria and Denmark for an event at hangar 7 and dinner at noma. Should be quite the trip!!!

  18. After 2 challenging weeks it felt good to have a solid night, step back and see all of the hard work come together. New menu half way there!
