8pm served first course, 3am served tea and grappa. Many many courses between. 16 guests meant lots of people washing dishes!! :-)

Sat down within 10 minutes of our target time! Sadly, the burrata for the amuse had gone bad. Backup cheese, pecorino, filled in nicely.

@ No tubes. We're frying shells of cannoli dough but not cannoli-shaped. That would be far too large for dessert. (9 course meal.)

Threw away all actual cannoli dough recipes and went on instinct. Replaced Marsala w/ vermouth, cinnamon w/nutmeg, butter w/crisco. SUCCESS!
