  6. 8pm served first course, 3am served tea and grappa. Many many courses between. 16 guests meant lots of people washing dishes!! :-)
  7. Sat down within 10 minutes of our target time! Sadly, the burrata for the amuse had gone bad. Backup cheese, pecorino, filled in nicely.
  8. I've spent three days prepping this appetizer. Pretty sure it's going to kick ass.
  9. Yeah, when I say 11 courses, I don't mean 11 dishes. Each course has multiple dishes/ingredients, of course. Will post menu later.
  10. Cooking. Somehow the meal has expanded to 11 courses, including an amuse bouche, and not including that dessert is 3 separate things.
  11. @tamidon Tried that just for kicks, but tubes have to be metal or they don't cook inside. (or overcook outside)
  12. @rikibeth Even the mini wouldn't work for this presentation. And that would require purchase of mini cannoli tubes, too.

  14. @rikibeth No tubes. We're frying shells of cannoli dough but not cannoli-shaped. That would be far too large for dessert. (9 course meal.)
  15. . @LKHamilton These days the most professional presentation of a manuscript is an electronic doc clean of tabs, double-spaces, & underlines.
  16. @LKHamilton Speaking as an editor, double-spacing only makes a writer look like they learned to type in 1950. Everyone should quit it.
  17. @nkjemisin We're lucky if we get even the heart in a duck usually, but amazingly this year we got all giblets in 4 ducks in a row so far!
  18. Threw away all actual cannoli dough recipes and went on instinct. Replaced Marsala w/ vermouth, cinnamon w/nutmeg, butter w/crisco. SUCCESS!
  19. Final trip to Formaggio, done. White Truffle Acquired!!! Now attempting to candy basil. Leaves seem to discolor no matter what.
  20. It was the Licor 43 in the eggnog that did me in. Zzzzzz.
