  2. @tidewaters mix the flour & potatoe mixtures by hand until satiny, roll out dough, make into small oval shapes and boil for 2 mins
  3. @tidewaters scoop out the inside of the potatoes while still hot. Either run through food processor or force through strainer w/a spoon
  4. @tidewaters take 2 lbs potatoes, bake them for an hour. Mix 1 & 1/3 cups flour with 1 tsp salt & 1/4 tsp ground nutmeg.
  5. Gnocchi may be the easiest fresh pasta to make. And may be the most delicious with roasted garlic creme sauce.
