  1. Gorgeous loin of 1+ tombo (pink albacore). What to do with it? Wasabi parsnip puree, micro mustard mix and local daikon???
  2. Tacos suaves for the crew lunch today. Yum.
  3. Hoarse and losing my voice from expediting at the top of my lungs for 4 straight hours. Loco, loco.
  4. At Ayrshire Farm tasting 9 breeds of heritage turkey. Fitting for me, as big of a turkey as I am. ;)
  5. Jonesing for porcini risotto!
  6. Saturday night dinner service is going early tonight. Just as well--I'm tired of standing around cracking out stone crab claws. ;)
  7. Quiet week leading into Halloween weekend. Working on Chef's Tasting: caribou, stone crab, vanilla grass, rabbit, opah, foie gras

  9. It's too beautiful outside. No offense to my customers but I really don't want to go to work today!
  10. Northern puffers, aka sea squab, from the Chesapeake Bay make their return to the One Block West menu tonight.
  11. 39F and raining but I'm still at the Winchester farmers market. Broccoli, leeks, radishes, winter squashes, celery root are gorgeous!
  12. Terrine de foie gras with Calvados and black truffles in the oven.

  15. Profoundly saddened that Gourmet magazine is no more. I started reading in 1968.
  16. Impeccably fresh Spanish mackerel tonight with luffa arrabbiata and local wild watercress.
